  • Shirataki noodles
  • Annatto powder (11/2 tbsp)
  • Garlic, 3 cloves (minced)
  • Small onion (minced)
  • Six pieces of shrimp (peeled, remove heads and set aside)
  • Two cups of water
  • Cooking oil
  • Fish sauce
  • Dried shrimp (1 tbsp)
  • Ground pepper
  • Almond flour (half cup)
  • One egg (beaten)

To prepare your palabok, do the following steps:

  • Cook your noodles until tender
  • Mix and blend the shrimp heads with the 2 cups of water, drain and keep the juice aside
  • Sautee garlic, onion, and the dried shrimp. Add the six pieces of shrimp and cook until shrimps turn orange. Set it aside
  • In another bowl, mix the juice from the shrimp heads, fish sauce, and annatto powder. Leave it for 3 minutes. This is your toppings
  • Add the almond flour while stirring it constantly. Add it slowly
  • Add the beaten egg and stir the mixture until it thickens. This is your sauce
  • Pour sauce on your shitake noodles, add sauce and toppings. 

Low carb grilled chicken and peanut sauce Keto Recipe

One of my favorite keto diet recipes is low carb grilled chicken and peanut sauce and you need the following ingredients to prepare it:

  • Chicken thigh (skinned)
  • One tablespoon of lime juice
  • One tablespoon of sugar-free fish sauce 
  • One tablespoon wheat free soy sauce
  • One tablespoon avocado oil
  • One tablespoon fresh ginger (minced)
  • One tablespoon fresh garlic (minced)
  • One tablespoon cayenne pepper
  • One tablespoon ground coriander
  • One tablespoon granulated erythritol sweetener

For your peanut sauce, you will need:

  • Half cup sugar-free peanut butter
  • One tablespoon fresh ginger (minced)
  • One tablespoon fresh garlic (minced)
  • One tablespoon of sugar-free fish sauce 
  • One tablespoon jalapeño pepper
  • Two tablespoon rice wine vinegar
  • One tablespoon of lime juice
  • Two tablespoon water
  • Two tablespoons granulated erythritol sweetener

To prepare your low carb grilled chicken, do the following steps:

  • Combine lime juice, fish sauce, rice wine vinegar, ground coriander, ginger, garlic, pepper, avocado oil, and sweetener in a bowl. Whisk and mix together
  • Add the chicken into the bowl to coat. Refrigerate for 24 hours
  • Grill your chicken
  • Serve with peanut sauce

To prepare your peanut sauce, do the following steps:

  • Put in all peanut sauce ingredients in a bowl. Mix and blend until smooth.
